During my stay at Provins a few weeks ago (I have already talked about it here), I had the chance to have lunch at L’Esquisse, “Aux Vieux Remparts” Hotel’s gourmet restaurant. At l’Esquisse, it is the chef Lionel Seret who is in charge. Through his menu, he offers a very savory cuisine in featuring local products.
I opted for the “Menu du marché” at the price of 48€. It is composed of a starter, a main course and a dessert. We don’t choose our dishes on the menu, contrary to traditional restaurants but we only precise to the waiter what we don’t like. Then, the chef prepares a “surprise” menu accordingly to our tastes, his inspirations and his market findings.
